Chicken cream soup

Here’s a creamy chicken soup recipe that’s comforting and delicious:

Ingredients:

  • 2 tablespoons olive oil or butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 pound cooked chicken, shredded or diced
  • 4 cups chicken broth
  • 1 cup heavy cream or milk
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup frozen peas (optional)
  • Fresh parsley for garnish (optional)

Instructions:

  1. Sauté Vegetables: In a large pot, heat olive oil or butter over medium heat. Add the chopped onion, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes. Add minced garlic and cook for another minute.

  2. Add Chicken and Broth: Stir in the shredded or diced chicken, then pour in the chicken broth. Add the thyme and bring the mixture to a boil.

  3. Simmer: Reduce the heat and let the soup simmer for about 15-20 minutes.
